The very first meat show of this kind in Poland! Pastrami Deli invites you all for a culinary evening with two brilliant chefs that shares very charismatic personalities: Dario Cecchini and Adam Chrząstkowski. We warn you – this will  be not just live cooking! Be prepared for a lecture about butcher’s profession and many interesting stories from our guest, legendary butcher in of Panzana in Chianti!

Introducing our guests:

 

Dario Cecchini – the legend of italian and global butchery, showman, artist, a fan of italian poetry. Butcher in the 8th generation. As he says himself his creation is mostly about the respect for the animals that’s why all animal body parts has to be used. His beef and his pork are the best quality meat well known in Italy and the world.

 

Adam Chrząstkowski – one of the greatest meat specialist in Poland, experienced chef, co-owner of Ed Red restaurant in Cracow and Warsaw. In 2011 during Polish Presidency of European Union he was the main culinary consultant.

 
With Adam’s assistance Dario will lead partition of the half-carcass pork. The main event will be filled with Dario’s lecture and his stories about the philosophy of butcher’s profession. From the parted pork, Dario and Adam will prepare white sausage, seasoned with Tuscan herbs that is a part of the night’s menu.The supper will also include our restaurant’s specials – pastrami sandwiches and and hungarian wines.

Pastrami of Paweł Sacha, the co-founder of Pastrami Deli, had been tasted by Faith Willinger, New York Times journalist that lives in Florence, who is also a chef and the author for many culinary recipes. She is the italian ‘madrina’ – godmother of big culinary events in Italy. She wanted to prepare something special for a dinner with her friend – Dario Cecchini – and she had decided to use Paweł’s beef. After tasting our pastrami Dario wished to meet Paweł and so he invited him to his homeland – Panzano in Chianti. After their meeting and feasting in Tuscany the two gentelmen had become friends and that resulted with a common cooking at sicilian Etna, during local meat festival Carnalia.
